The longtime seafood vendor COLO (formerly Coast 2 Local and Coastal Local), will be expanding its offerings in the North Market Downtown to include a butcher shop, poultry shop, a new prepared food concept featuring burgers and deli sandwiches, and even an oyster bar.

The COLO butcher shop and poultry space will serve deli sandwiches and burgers, in addition to farm-sourced beef, pork and lamb. The seafood-focused COLO booth will also offer prepared food like shrimp po’ boys and more.

Rick Harrison Wolfe, North Market’s Executive Director and CEO said in a press release. “We knew we could trust Ian to reinvent the fresh butcher and poultry space along with a new prepared food concept, as these are very important components to North Market’s mission.”
